Spicy Baked Chicken Thighs

Marinate Ahead
Serves 4-6

Ingredients

  • 2 Tbsp fresh lime juice
  • 2 Tbsp Cajun seasoning
  • 2 tsp hot pepper sauce
  • ¼ tsp salt, ¼ tsp pepper
  • 2 lb bone-in chicken thighs, skinned

Instructions

  1. Combine lime juice, Cajun seasoning, hot pepper sauce, salt and pepper in a large zip-top plastic freezer bag.
  2. Add chicken thighs; seal bag, and turn to coat.
  3. Chill 1 hour.
  4. Preheat oven to 400°F.
  5. Remove chicken from bag; discard marinade.
  6. Place chicken on a large rimmed baking sheet lined with foil.
  7. Bake 35 minutes or until chicken is done.

Apple Coleslaw

Serves 4-6

Ingredients

  • 1 (16-oz) bag tricolor coleslaw mix
  • 2 apples, chopped
  • 3 Tbsp extra virgin olive oil
  • 2 Tbsp red wine vinegar
  • 1 Tbsp fresh lime juice
  • 1 tsp Dijon mustard
  • ¼ tsp salt, ¼ tsp pepper

Instructions

  1. Combine coleslaw mix and apples.
  2. Whisk together oil, vinegar, lime juice, mustard, salt and pepper in a small bowl.
  3. Pour dressing over coleslaw mixture; toss until well blended.
  4. Cover and chill 30 minutes to 1 hour before serving.
