Grilled Chicken with White Barbecue Sauce

Grilled Lemony Sweet Potatoes

Ingredients

  • 1½ lb skinless, bone-in chicken breasts
  • 1 tsp paprika
  • ½ tsp salt
  •  ½ tsp freshly ground pepper
  • ⅓ cup organic olive oil mayonnaise (or use a homemade Paleo mayonnaise)
  • 2 Tbsp white vinegar
  • 1 Tbsp fresh lemon juice
  • ¼ tsp cayenne pepper

Instructions

  1. Preheat grill to medium-high heat.
  2. Rub chicken with paprika, salt and pepper; place on greased grill rack.
  3. Grill 7 to 8 minutes per side or until chicken is done.
  4. Cut chicken into serving-size pieces.
  5. Meanwhile, combine mayonnaise, vinegar, lemon juice and cayenne pepper; serve with chicken.

Side Dish Ingredients

  • 4 large sweet potatoes
  • 2 Tbsp avocado oil
  • 1 tsp garlic salt
  • ½ tsp black pepper
  • ½ tsp grated lemon rind

Side Dish Instructions

  1. Preheat grill to medium-high.
  2. Meanwhile, microwave sweet potatoes at HIGH 6 to 8 minutes or until crisp-tender.
  3. Transfer to a cutting board until cool enough to handle (15 minutes).
  4. Cut potatoes lengthwise into 16 wedges. Transfer potatoes to a rimmed baking sheet; drizzle with oil; sprinkle with garlic salt, pepper and lemon rind.
  5. Toss to coat.
  6. Grill 3 minutes per side or until potatoes are charred and tender.
