Grilled Chicken with White Barbecue Sauce
Grilled Lemony Sweet PotatoesIngredients
- 1½ lb skinless, bone-in chicken breasts
- 1 tsp paprika
- ½ tsp salt
- ½ tsp freshly ground pepper
- ⅓ cup organic olive oil mayonnaise (or use a homemade Paleo mayonnaise)
- 2 Tbsp white vinegar
- 1 Tbsp fresh lemon juice
- ¼ tsp cayenne pepper
Instructions
- Preheat grill to medium-high heat.
- Rub chicken with paprika, salt and pepper; place on greased grill rack.
- Grill 7 to 8 minutes per side or until chicken is done.
- Cut chicken into serving-size pieces.
- Meanwhile, combine mayonnaise, vinegar, lemon juice and cayenne pepper; serve with chicken.
Side Dish Ingredients
- 4 large sweet potatoes
- 2 Tbsp avocado oil
- 1 tsp garlic salt
- ½ tsp black pepper
- ½ tsp grated lemon rind
Side Dish Instructions
- Preheat grill to medium-high.
- Meanwhile, microwave sweet potatoes at HIGH 6 to 8 minutes or until crisp-tender.
- Transfer to a cutting board until cool enough to handle (15 minutes).
- Cut potatoes lengthwise into 16 wedges. Transfer potatoes to a rimmed baking sheet; drizzle with oil; sprinkle with garlic salt, pepper and lemon rind.
- Toss to coat.
- Grill 3 minutes per side or until potatoes are charred and tender.
