Chipotle-Ranch Chicken Wraps

Ingredients

  • ½ cup refrigerated yogurt Ranch dressing
  • 1 chipotle pepper in adobo sauce, chopped
  • 1½ cups shredded rotisserie chicken
  • 1 cup shredded romaine lettuce
  • 2 carrots, shredded
  • 2 Roma tomatoes, chopped
  • 4 soft taco-size whole wheat tortillas

Instructions

  1. Whisk together dressing and chipotle pepper.
  2. Toss together dressing mixture, chicken, lettuce, carrots and tomatoes in a large bowl.
  3. Mound chicken mixture on each tortilla; roll up.

Side Dish Ingredients

  • 2 cups cubed pineapple
  • 3 kiwi, peeled and sliced
  • 1 Tbsp fresh lime juice

Side Dish Instructions

  1. Combine all ingredients in a large bowl; chill, if desired.
