Red Curry Beef and Broccoli
Cilantro Cauli-RiceIngredients
- 1½ lb eye of round roast
- 1 small green bell pepper, thinly sliced
- ½ onion, thinly sliced
- 1 tsp bottled minced garlic
- ¾ cup light coconut milk
- 2 Tbsp red curry paste
- 1 tsp crushed red pepper
- ½ (12-oz) pkg broccoli florets
Instructions
- Trim beef, and cut into 1-inch cubes; season with salt and pepper.
- Place beef in a 4-quart slow cooker. Top with bell pepper, onion and garlic.
- Add coconut milk, curry paste and red pepper.
- Cover and cook on LOW 6 to 8 hours.
- Stir in broccoli; cover and cook 30 minutes or until broccoli is crisp-tender.
- Serve over Cilantro Cauli-Rice.
Side Dish Ingredients
- 1 (12-oz) pkg cauliflower florets
- 1 Tbsp olive oil
- 2 Tbsp low-sodium chicken broth
- 2 Tbsp chopped fresh cilantro
- ¼ tsp salt
Side Dish Instructions
- Pulse florets in a food processor until rice-like consistency.
- Heat oil in a large skillet over medium-high heat.
- Add cauliflower and broth; cover and cook 10 minutes.
- Remove from heat. Stir in cilantro and salt; season with pepper to taste.
