Red Curry Beef and Broccoli

Ingredients

  • 1½ lb eye of round roast
  • 1 small green bell pepper, thinly sliced
  • ½ onion, thinly sliced
  • 1 tsp bottled minced garlic
  • ¾ cup light coconut milk
  • 2 Tbsp red curry paste
  • 1 tsp crushed red pepper
  • ½ (12-oz) pkg broccoli florets

Instructions

  1. Trim beef, and cut into 1-inch cubes; season with salt and pepper.
  2. Place beef in a 4-quart slow cooker. Top with bell pepper, onion and garlic.
  3. Add coconut milk, curry paste and red pepper.
  4. Cover and cook on LOW 6 to 8 hours.
  5. Stir in broccoli; cover and cook 30 minutes or until broccoli is crisp-tender.
  6. Serve over Cilantro Cauli-Rice.

Side Dish Ingredients

  • 1 (12-oz) pkg cauliflower florets
  • 1 Tbsp olive oil
  • 2 Tbsp low-sodium chicken broth
  • 2 Tbsp chopped fresh cilantro
  • ¼ tsp salt

Side Dish Instructions

  1. Pulse florets in a food processor until rice-like consistency.
  2. Heat oil in a large skillet over medium-high heat.
  3. Add cauliflower and broth; cover and cook 10 minutes.
  4. Remove from heat. Stir in cilantro and salt; season with pepper to taste.
