Trim beef, and cut into 1-inch cubes; season with salt and pepper.
Place beef in a 4-quart slow cooker. Top with bell pepper, onion and garlic.
Add coconut milk, curry paste and red pepper.
Cover and cook on LOW 6 to 8 hours.
Stir in broccoli; cover and cook 30 minutes or until broccoli is crisp-tender.
Serve over Cilantro Cauli-Rice.
1 (12-oz) pkg cauliflower florets
1 Tbsp olive oil
2 Tbsp low-sodium chicken broth
2 Tbsp chopped fresh cilantro
¼ tsp salt
Pulse florets in a food processor until rice-like consistency.
Heat oil in a large skillet over medium-high heat.
Add cauliflower and broth; cover and cook 10 minutes.
Remove from heat. Stir in cilantro and salt; season with pepper to taste.
