Crispy Onion Parmesan Chicken

Ingredients

  • ¼ cup mayonnaise
  • 2 Tbsp freshly grated Parmesan cheese
  • ¾ lb boneless, skinless chicken breasts
  • 1 Tbsp Dijon mustard
  • ¼ cup Panko breadcrumbs
  • ½ (3-oz) pkg french fried onions, crushed

Instructions

  1. Preheat oven to 425°F.
  2. Stir together mayonnaise and cheese in a small bowl.
  3. Cut each chicken breast in half crosswise and pound to an even thickness; place on a foil-lined baking sheet.
  4. Season chicken with salt and pepper; brush with Dijon to coat.
  5. Spread mayonnaise mixture over chicken.
  6. Stir together panko and onions; dredge tops of chicken in mixture to coat.
  7. Return to pan, and bake 15 to 20 minutes or until chicken is done.

Side Dish Ingredients

  • 1 (4.6-oz) box angel hair pasta with herbs
  • 1 zucchini, sliced
  • 1 yellow squash, sliced
  • ½ pint grape tomatoes
  • 1 Tbsp olive oil

Side Dish Instructions

  1. Preheat oven to 475°F.
  2. Prepare pasta according to package directions.
  3. Toss vegetables and oil on a rimmed baking sheet.
  4. Bake 10 minutes or until tender and lightly browned; season to taste.
