Crispy Onion Parmesan Chicken
Angel Hair Pasta with Herbs and Roasted Tomatoes, Squash and ZucchiniIngredients
- ¼ cup mayonnaise
- 2 Tbsp freshly grated Parmesan cheese
- ¾ lb boneless, skinless chicken breasts
- 1 Tbsp Dijon mustard
- ¼ cup Panko breadcrumbs
- ½ (3-oz) pkg french fried onions, crushed
Instructions
- Preheat oven to 425°F.
- Stir together mayonnaise and cheese in a small bowl.
- Cut each chicken breast in half crosswise and pound to an even thickness; place on a foil-lined baking sheet.
- Season chicken with salt and pepper; brush with Dijon to coat.
- Spread mayonnaise mixture over chicken.
- Stir together panko and onions; dredge tops of chicken in mixture to coat.
- Return to pan, and bake 15 to 20 minutes or until chicken is done.

- 1 (4.6-oz) box angel hair pasta with herbs
- 1 zucchini, sliced
- 1 yellow squash, sliced
- ½ pint grape tomatoes
- 1 Tbsp olive oil
Side Dish Instructions
- Preheat oven to 475°F.
- Prepare pasta according to package directions.
- Toss vegetables and oil on a rimmed baking sheet.
- Bake 10 minutes or until tender and lightly browned; season to taste.
