Ground Beef Taco Bowls

Ingredients

  • 1½ lb lean ground beef
  • 1 (8-oz) pkg diced onions
  • 1 (8-oz) pouch skillet taco sauce (such as Frontera)
  • 2 (8.5-oz) pouches microwavable brown rice
  • 2 (10.4-oz) pkg chipotle-Cheddar chopped salad kit (such as Dole)
  • 2 tomatoes, chopped
  • 1 large avocado, sliced
  • ¼ cup chopped fresh cilantro

Instructions

  1. Cook beef and onion in a large nonstick skillet 6 to 8 minutes or until beef is browned and crumbly. Add taco sauce; cook 2 minutes or until thoroughly heated.
  2. Meanwhile, cook rice according to package directions; divide among 6 bowls.
  3. Combine salad and dressing from salad kit; spoon into bowls, and top with beef mixture. Top with tomatoes, avocado, cilantro, and salad kit toppings.
