Tater Tot "Nachos"

Ingredients

  • 1 (32-oz) pkg frozen tater tots
  • 1 (15-oz) can vegetarian chili
  • 2 cups freshly shredded Cheddar cheese
  • 2 avocados, halved, pitted, and chopped
  • 2 beefsteak tomatoes, chopped
  • 1 (8-oz) container sour cream
  • ½ cup sliced green onions

Instructions

  1. Bake tater tots according to package directions in a single layer on a rimmed baking sheet.
  2. Meanwhile, cook chili in a small saucepan over medium heat 3 to 5 minutes or until thoroughly heated.
  3. Divide tater tots evenly among 6 serving plates; top evenly with chili, cheese, avocados, tomatoes, sour cream and green onions.

Side Dish Ingredients

  • 1 (16-oz) pkg frozen unsweetened strawberries
  • 1 cup plain Greek yogurt
  • 1 cup orange juice
  • 1 Tbsp honey

Side Dish Instructions

  1. Process strawberries, yogurt, orange juice and honey in a blender, in batches, until smooth.
