Apple-Sage Chickpea Patties

Ingredients

  • 1 large Granny Smith apple, peeled and grated
  • 2 (15-oz) cans chickpeas, drained and rinsed
  • ½ cup finely chopped onion
  • 3 Tbsp chopped fresh sage
  • 1 cup panko
  • ½ tsp garlic salt
  • ½ tsp pepper
  • 2 Tbsp olive oil, divided

Instructions

  1. Peel and grate apple; squeeze to remove excess moisture.
  2. Mash chickpeas in a large bowl. Add apple, onion, sage, panko, garlic salt and pepper. Form mixture into 6 patties, cover and chill 30 minutes.
  3. Heat 1 Tbsp oil in a large skillet over medium-high heat; add 3 patties, and cook 4 to 5 minutes per side or until browned. Repeat with remaining 1 Tbsp olive oil and patties.

  • 2 lb carrots, peeled, halved and cut into 2-inch pieces
  • 2 Tbsp olive oil
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp salt
  • 1 tsp pepper

Side Dish Instructions

  1. Place a large rimmed baking sheet in oven. Preheat oven to 425°F.
  2. Combine carrots with remaining ingredients; spread in a single layer on preheated pan. Bake 18 to 22 minutes or until carrots are tender, stirring once.
