Chicken, Broccoli, and Basil Stir-Fry

Ingredients

  • 1½ lb boneless, skinless chicken breasts, cut into 1-inch cubes
  • 2 Tbsp sesame oil
  • 1 (12-oz) pkg broccoli florets
  • 1 (10-oz) pkg matchstick-cut carrots
  • 1 Tbsp jarred minced garlic
  • ½ cup sweet chili sauce
  • ¼ cup low-sodium soy sauce
  • ½ cup thinly sliced fresh basil

Instructions

  1. Cook chicken in hot oil in a large skillet over medium heat until browned.
  2. Stir in broccoli, carrots, and garlic; cook, stirring constantly, 3 to 4 minutes. Stir in chili sauce and soy sauce; cook 3 minutes. Stir in basil.

Side Dish Ingredients

  • 1 (8-oz) pkg soba noodles
  • 4 green onions, chopped
  • ½ cup chopped dry roasted, lightly salted peanuts

Side Dish Instructions

  1. Cook soba noodles according to package directions. Toss with green onions and nuts.
