Seared Chicken with Greek Relish
Basil-Pine Nut BulgurIngredients
- 2 lb chicken cutlets
- 1 tsp salt, divided
- 1 tsp pepper, divided
- 3 Tbsp olive oil, divided
- 1 seedless cucumber, chopped
- 1 pint grape tomatoes, halved
- 1½ cups diced red onions
- ¼ cup chopped fresh mint
- 1 tsp lemon zest
- 2 Tbsp fresh lemon juice
Instructions
- Sprinkle chicken with ½ tsp each salt and pepper. Cook, in 2 batches, in 2 Tbsp hot oil over medium-high heat 3 to 4 minutes per side or until done.
- Meanwhile, stir together cucumber, tomatoes, onion, mint, lemon zest, juice, 1 Tbsp oil, and ½ tsp each salt and pepper. Serve relish over chicken.

- 1¾ cups bulgur wheat
- ½ cup pine nuts
- 2 Tbsp chopped fresh basil
- ½ tsp salt
- ¼ tsp pepper
Side Dish Instructions
- Cook bulgur according to package directions. Toss with nuts, basil, salt, and pepper.
