Upside-Down Turkey Shepherd's Pie

Ingredients

  • ½ lb ground turkey
  • ⅓ cup chopped onions
  • ⅔ cup frozen peas and carrots
  • ¾ cup low-sodium chicken broth
  • 2 tsp cornstarch
  • 2 tsp tomato paste with Italian herbs
  • 1 tsp chopped fresh rosemary
  • ⅛ tsp salt
  • ⅛ tsp pepper
  • 1 (12-oz) pkg refrigerated mashed potatoes (such as Bob Evans)

Instructions

  1. Cook turkey and onions in a large skillet over medium heat 8 minutes or until turkey is browned and onion is tender. Add peas and carrots.
  2. Whisk together broth, cornstarch, tomato paste, rosemary, salt, and pepper; add to skillet. Cook 6 to 8 minutes or until sauce is thickened.
  3. Meanwhile, cook potatoes according to package directions. Divide potatoes between 2 bowls; top with turkey mixture.
