Tomato-Lentil Soup
Ingredients
- 1 cup chopped onion
- 2 carrots, chopped
- 4 cloves garlic, minced
- ¼ cup olive oil
- 2 (28-oz) cans crushed tomatoes
- 6 cups vegetable broth
- 1 cup lentils, rinsed
- ½ tsp salt
- ½ tsp pepper
- 2 green onions, chopped
Instructions
- Sauté chopped onion, carrots, and garlic in hot oil in a large pot or Dutch oven over medium heat 10 minutes or until tender. Add tomatoes, broth, and lentils.
- Bring to a boil; reduce heat and simmer, uncovered, 20 minutes, stirring occasionally. Stir in salt and pepper; cook 25 minutes or until lentils are tender. Sprinkle with green onions before serving.
