Mushroom Gravy-Smothered Chicken Meatballs
Easy Mashed Potatoes and Buttered BroccoliIngredients
- 2 (16-oz) pkg uncooked chicken meatballs (such as Murray's)
- 2 Tbsp butter
- 4 (4-oz) pkg gourmet blend mushrooms
- 1½ cups chopped onion
- 2 Tbsp minced garlic
- ½ tsp salt
- ½ tsp pepper
- ¼ cup all-purpose flour
- 1 (14.5-oz) can low-sodium beef broth
Instructions
- Preheat oven to 425°F. Cut meatballs in half. Place on a wire rack on a rimmed baking sheet. Bake 15 minutes.
- Meanwhile, melt butter in a large nonstick skillet over medium-high heat. Add mushrooms, onions, garlic, salt, and pepper; cook 6 minutes or until browned and tender.
- Stir in flour; cook 1 minute. Gradually add broth, stirring until blended. Return to a boil, reduce heat, and simmer 10 minutes or until sauce is thickened. Stir in meatballs.

- 2 (12-oz) pkg broccoli florets
- 2 Tbsp butter
- ¼ tsp salt
- ¼ tsp pepper
- 1 (24-oz) pkg refrigerated mashed potatoes (such as Simply Potatoes)
Side Dish Instructions
- Cook broccoli according to package directions; toss with butter, salt, and pepper.
- Heat potatoes according to package directions.
