Mushroom Gravy-Smothered Chicken Meatballs

Ingredients

  • 2 (16-oz) pkg uncooked chicken meatballs (such as Murray's)
  • 2 Tbsp butter
  • 4 (4-oz) pkg gourmet blend mushrooms
  • 1½ cups chopped onion
  • 2 Tbsp minced garlic
  • ½ tsp salt
  • ½ tsp pepper
  • ¼ cup all-purpose flour
  • 1 (14.5-oz) can low-sodium beef broth

Instructions

  1. Preheat oven to 425°F. Cut meatballs in half. Place on a wire rack on a rimmed baking sheet. Bake 15 minutes.
  2. Meanwhile, melt butter in a large nonstick skillet over medium-high heat. Add mushrooms, onions, garlic, salt, and pepper; cook 6 minutes or until browned and tender.
  3. Stir in flour; cook 1 minute. Gradually add broth, stirring until blended. Return to a boil, reduce heat, and simmer 10 minutes or until sauce is thickened. Stir in meatballs.

  • 2 (12-oz) pkg broccoli florets
  • 2 Tbsp butter
  • ¼ tsp salt
  • ¼ tsp pepper
  • 1 (24-oz) pkg refrigerated mashed potatoes (such as Simply Potatoes)

Side Dish Instructions

  1. Cook broccoli according to package directions; toss with butter, salt, and pepper.
  2. Heat potatoes according to package directions.
