Cheesy Chicken, Broccoli, and Rice Skillet
Berries with Mixed Greens SaladIngredients
- 2 (8.8-oz) pouches microwavable brown rice (see Note)
- 2 (12-oz) pkg broccoli florets
- 2 Tbsp butter
- 2 Tbsp all-purpose flour
- 1 cup 2% reduced-fat milk
- 1 cup low-sodium chicken broth
- ½ tsp salt
- ½ tsp pepper
- 1½ cups shredded reduced-fat Cheddar cheese
- 2 cups shredded rotisserie chicken
Instructions
- Cook rice and and broccoli according to package directions.
- Melt butter in a large skillet over medium-high heat. Whisk in flour, and cook 2 minutes. Add milk, broth, salt, and pepper; cook, whisking constantly, 5 minutes or until thickened. Remove from heat.
- Stir in 1 cup cheese until melted. Stir in chicken, rice, and broccoli. Top with ½ cup cheese. Cover and cook 1 minute or until cheese is melted.
Side Dish Ingredients
- 1 (10-oz) pkg mixed baby greens
- ½ cup thinly sliced red onion
- 1 (4.4-oz) pkg blueberries
- 1 (4.4-oz) pkg raspberries
- ⅓ cup refrigerated balsamic vinaigrette
- ½ cup crumbled feta cheese
Side Dish Instructions
- Place greens, onion, and berries in a bowl. Drizzle with dressing; toss. Sprinkle with cheese.
