Slow Cooker Sweet-and-Sour Brisket

Ingredients

  • 2½ lb beef brisket, trimmed
  • 2 onions, sliced
  • 1 (15-oz) can BPA-free organic tomato sauce
  • 2 Tbsp unsulfured molasses
  • 1 Tbsp balsamic vinegar

Instructions

  1. Sprinkle brisket lightly with salt and pepper. Place onions in a 5-quart slow cooker; place brisket over onions.
  2. Whisk together tomato sauce, molasses, and vinegar; pour over brisket. Cover and cook on LOW 8 hours or until brisket is tender. Slice brisket before serving.

Side Dish Ingredients

  • 1 lb organic Yukon Gold potatoes, cut into small chunks
  • 2 slices nitrate-free bacon
  • 2 Tbsp olive oil
  • 1 (16-oz) pkg angel hair coleslaw
  • 1 tsp salt
  • 1 tsp pepper
  • ½ tsp garlic powder

Side Dish Instructions

  1. Steam potatoes in a steamer basket over simmering water 8 minutes or until tender. Drain; let dry.
  2. Cook bacon in a large nonstick skillet over medium heat until crisp; drain, reserving drippings in skillet.
  3. Add oil to drippings; sauté potatoes, coleslaw, salt, pepper, and garlic powder in hot oil 10 minutes or until tender and browned.
