Nutty "Granola" with Yogurt

Ingredients

  • 3 Tbsp butter
  • 1 tsp vanilla extract
  • ¼ tsp salt
  • ¼ tsp ground cinnamon
  • Stevia (optional)
  • 1 cup chopped walnuts
  • ⅓ cup sliced almonds
  • ¾ cup unsweetened shredded coconut
  • 2 Tbsp flax seeds
  • 2⅔ cups whole-milk plain Greek yogurt

Instructions

  1. Preheat oven to 350°F. Melt butter in a small bowl. Stir in vanilla, salt, cinnamon, and, if desired, stevia for sweetness.
  2. Combine nuts, coconut, and flax seeds in a large bowl; drizzle with butter mixture. Toss.
  3. Spread nut mixture on a baking sheet lined with parchment paper. Bake 10 to 12 minutes or until browned. Cool and break into small pieces.
  4. Serve "granola" over yogurt.
