Avocado-Pineapple Smoothie

Serves 4-6

Ingredients

  • 2 avocados, pitted and peeled
  • 2 Tbsp fresh lime juice
  • 2 cups cubed pineapple
  • 3 Tbsp raw honey
  • 1 tsp minced fresh ginger
  • 1 (13-oz) can coconut milk
  • 2 cups ice
  • 2 Tbsp chia seeds, soaked

Instructions

  1. Process avocados, lime juice, pineapple, honey, ginger, coconut milk, and ice in a blender, scraping down sides as needed.
  2. Stir in chia seeds, and add enough water to reach desired consistency.

Note:

For more protein, serve a handful of raw almonds or a boiled egg to eat along with the smoothie.
