Chocolate Stout Cupcakes with Irish Cream Frosting

Ingredients

  • 2 cups sugar
  • 1 cup stout beer (or use strong brewed coffee)
  • 1 cup butter
  • ¾ cup unsweetened baking cocoa
  • 2 large eggs
  • ⅔ cup sour cream
  • 2 cups all-purpose flour
  • 1½ tsp baking soda
  • Irish Cream Frosting (recipe follows)

Instructions

  1. Preheat oven to 350°F; line 24 muffin cups with paper or foil baking cups.
  2. Combine sugar, beer, butter, and cocoa in a saucepan. Cook over medium heat, stirring, until butter is melted. Cool.
  3. Combine eggs and sour cream in a large bowl; beat at medium speed with a mixer until smooth. Gradually add chocolate mixture, beating until blended.
  4. Stir together flour and baking soda in a small bowl; gradually add to chocolate mixture, beating until smooth. Spoon batter into prepared muffin cups.
  5. Bake 15 to 20 minutes or until a wooden pick inserted in center comes out clean. Cool in pan 10 minutes. Remove from pan, and cool completely on wire racks.
  6. Spread or pipe Irish Cream Frosting recipe on cupcakes.
