Chocolate Irish Cream Cake

Ingredients

  • 1 (18.25-oz) box chocolate cake mix
  • 3 large eggs
  • 1¼ cups Irish cream liqueur, divided
  • ½ cup vegetable oil
  • 1¼ cups powdered sugar
  • Optional toppings: green sprinkles, chocolate chips, or fresh mint sprigs

Instructions

  1. Preheat oven to 350°F; grease a Bundt pan with shortening.
  2. Combine cake mix, eggs, 1 cup liqueur, and oil in a bowl. Mix on medium speed with an electric mixer until smooth.
  3. Pour batter into prepared pan. Bake 40 to 45 minutes or until a toothpick inserted in center comes out clean.
  4. Let cake cool 10 to 15 minutes, and then invert onto a cake plate.
  5. Whisk together powdered sugar and remaining ¼ cup liqueur. Pour over cake. Cut into slices to serve.
  6. Makes 12 to 14 servings.
