Skinny Grasshopper Pie
Ingredients
- 1 (3.4-oz) box instant sugar-free vanilla pudding mix
- 1½ cups unsweetened almond milk
- ½ tsp mint extract
- 1 (8-oz) carton fat-free frozen whipped topping, thawed
- ½ tsp green gel food coloring (optional)
- 1 (6-oz) chocolate pie crust
- 1 to 2 Tbsp unsweetened baking cocoa
Instructions
- Whisk together pudding mix and almond milk until smooth. Refrigerate 10 minutes to thicken.
- Remove from refrigerator, and stir in mint extract.
- Fold whipped topping into pudding mixture. Stir in green food coloring, if desired.
- Spread pie filling into chocolate pie crust. Dust with cocoa.
- Freeze 4 to 6 hours or overnight. Let pie thaw slightly before serving.
- Serves 8.
