Skinny Grasshopper Pie

Ingredients

  • 1 (3.4-oz) box instant sugar-free vanilla pudding mix
  • 1½ cups unsweetened almond milk
  • ½ tsp mint extract
  • 1 (8-oz) carton fat-free frozen whipped topping, thawed
  • ½ tsp green gel food coloring (optional)
  • 1 (6-oz) chocolate pie crust
  • 1 to 2 Tbsp unsweetened baking cocoa

Instructions

  1. Whisk together pudding mix and almond milk until smooth. Refrigerate 10 minutes to thicken.
  2. Remove from refrigerator, and stir in mint extract.
  3. Fold whipped topping into pudding mixture. Stir in green food coloring, if desired.
  4. Spread pie filling into chocolate pie crust. Dust with cocoa.
  5. Freeze 4 to 6 hours or overnight. Let pie thaw slightly before serving.
  6. Serves 8.
