Paleo Coconut-Cauliflower Bites

Ingredients

  • ½ cup ghee, melted (or use melted butter)
  • 1¼ cups unsweetened shredded coconut
  • 1 tsp garlic salt
  • 1 tsp pepper
  • 1 head cauliflower, cut into large florets

Instructions

  1. Preheat oven to 450°F.
  2. Pour melted ghee into a shallow dish.
  3. Stir together coconut, garlic salt and pepper in a second shallow dish.
  4. Dip cauliflower in ghee; dredge in coconut mixture to coat.
  5. Place on a parchment paper-lined baking sheet.
  6. Lightly spray cauliflower with coconut oil cooking spray.
  7. Bake 18 to 20 minutes or until cauliflower is lightly browned.
  8. Serve with Avocado Dipping Sauce.
