Spicy Grilled Flank Steak
Spanish-Style Cauli-RiceIngredients
- ½ tsp smoked paprika
- ¼ tsp salt
- ¼ tsp ground cumin
- ⅛ tsp cayenne pepper
- 2 Tbsp olive oil
- 3 cloves garlic, minced
- ¾ lb flank steak
Instructions
- Preheat grill or grill pan to medium-high heat. Combine paprika, salt, cumin, pepper, oil, and garlic. Rub steak with spice mixture.
- Grill steak, covered, 4 to 5 minutes per side or to desired doneness. Let stand 10 minutes before thinly slicing across the grain.

- ¼ cup diced onion
- 1 clove garlic, minced
- 1 Tbsp olive oil
- ½ (16-oz) pkg cauliflower crumbles
- ½ cup gluten-free chicken broth
- 3 Tbsp sliced pitted green olives
- 1 Tbsp tomato paste
- 1 Roma tomato, chopped
Side Dish Instructions
- Sauté onion and garlic in hot oil in a saucepan over medium-high heat 4 minutes or until onion is tender.
- Stir in cauliflower, broth, olives, and tomato paste; cover and cook 15 minutes or until cauliflower is tender. Remove from heat; stir in tomato. Season with salt and pepper to taste.
