Spicy Grilled Flank Steak

Ingredients

  • ½ tsp smoked paprika
  • ¼ tsp salt
  • ¼ tsp ground cumin
  • ⅛ tsp cayenne pepper
  • 2 Tbsp olive oil
  • 3 cloves garlic, minced
  • ¾ lb flank steak

Instructions

  1. Preheat grill or grill pan to medium-high heat. Combine paprika, salt, cumin, pepper, oil, and garlic. Rub steak with spice mixture.
  2. Grill steak, covered, 4 to 5 minutes per side or to desired doneness. Let stand 10 minutes before thinly slicing across the grain.

Side Dish Ingredients

  • ¼ cup diced onion
  • 1 clove garlic, minced
  • 1 Tbsp olive oil
  • ½ (16-oz) pkg cauliflower crumbles
  • ½ cup gluten-free chicken broth
  • 3 Tbsp sliced pitted green olives
  • 1 Tbsp tomato paste
  • 1 Roma tomato, chopped

Side Dish Instructions

  1. Sauté onion and garlic in hot oil in a saucepan over medium-high heat 4 minutes or until onion is tender.
  2. Stir in cauliflower, broth, olives, and tomato paste; cover and cook 15 minutes or until cauliflower is tender. Remove from heat; stir in tomato. Season with salt and pepper to taste.
