Apple-Cinnamon Snack Cake
Ingredients
- ½ (8-oz) block cream cheese, softened
- ¾ cup plus 2 Tbsp sugar, divided
- 1 large egg, separated
- 8 Tbsp milk, divided
- 2 tsp vanilla extract, divided
- ½ cup plus 1 Tbsp vegetable oil
- 6 Tbsp sour cream
- 1 large egg
- 1½ cups all-purpose flour
- 1½ tsp baking powder
- 1 tsp ground cinnamon
- ½ tsp salt
- 1 cup diced apple
Instructions
- Preheat oven to 350°F. Coat an 8-inch round pan with cooking spray.
- Beat cream cheese and 2 Tbsp sugar at medium speed with an electric mixer until smooth. Add 1 egg white, 2 Tbsp milk, and 1 tsp vanilla; beat until well blended.
- Beat ¾ cup sugar and oil at medium speed until fluffy. Add sour cream, 6 Tbsp milk, 1 egg yolk, 1 whole egg, and 1 tsp vanilla. Beat until well blended. Add flour, baking powder, cinnamon, and salt. Beat well. Fold in apple.
- Pour batter into prepared pan. Dollop cream cheese mixture over top, and swirl into batter using a knife or wooden pick.
- Bake 35 to 40 minutes or until golden brown and a wooden pick inserted into center comes out with only a few crumbs. Cool cake slightly; serve warm.
