Apple-Cinnamon Snack Cake

Ingredients

  • ½ (8-oz) block cream cheese, softened
  • ¾ cup plus 2 Tbsp sugar, divided
  • 1 large egg, separated
  • 8 Tbsp milk, divided
  • 2 tsp vanilla extract, divided
  • ½ cup plus 1 Tbsp vegetable oil
  • 6 Tbsp sour cream
  • 1 large egg
  • 1½ cups all-purpose flour
  • 1½ tsp baking powder
  • 1 tsp ground cinnamon
  • ½ tsp salt
  • 1 cup diced apple

Instructions

  1. Preheat oven to 350°F. Coat an 8-inch round pan with cooking spray.
  2. Beat cream cheese and 2 Tbsp sugar at medium speed with an electric mixer until smooth. Add 1 egg white, 2 Tbsp milk, and 1 tsp vanilla; beat until well blended.
  3. Beat ¾ cup sugar and oil at medium speed until fluffy. Add sour cream, 6 Tbsp milk, 1 egg yolk, 1 whole egg, and 1 tsp vanilla. Beat until well blended. Add flour, baking powder, cinnamon, and salt. Beat well. Fold in apple.
  4. Pour batter into prepared pan. Dollop cream cheese mixture over top, and swirl into batter using a knife or wooden pick.
  5. Bake 35 to 40 minutes or until golden brown and a wooden pick inserted into center comes out with only a few crumbs. Cool cake slightly; serve warm.
