Chicken, Watermelon, and Arugula Salad

Ingredients

  • 1½ cups shredded rotisserie chicken (without skin)
  • 1 (10-oz) pkg baby arugula
  • 3 cups cubed watermelon
  • ⅓ cup thinly sliced red onion
  • ¼ cup chopped fresh mint
  • 1 Tbsp white wine vinegar
  • 1 tsp whole-grain Dijon mustard
  • 1 tsp honey
  • ¼ tsp salt
  • ¼ tsp pepper
  • ¼ cup extra virgin olive oil
  • ¾ cup crumbled feta cheese
  • ¼ cup chopped walnuts, toasted

Instructions

  1. Combine chicken, arugula, watermelon, onion, and mint in a large bowl.
  2. Whisk together vinegar, mustard, honey, salt, and pepper in a bowl. Gradually add oil, whisking until blended.
  3. Pour dressing over salad, and toss. Sprinkle with cheese and nuts.
