Barbecue Pork and Collard Green Pizza

Ingredients

  • 2 Tbsp butter
  • 1 onion, chopped
  • 6 cups chopped collard greens
  • 1 Tbsp apple cider vinegar
  • ¼ tsp crushed red pepper
  • 1 Tbsp olive oil
  • 2 Tbsp yellow cornmeal
  • 1 (13.8-oz) can refrigerated pizza dough
  • 1 (8-oz) pkg shredded mozzarella cheese, divided
  • 1 (16-oz) container fully cooked sauceless pulled pork (such as Curly's)
  • ½ cup vinegar barbecue sauce
  • 2 Roma tomatoes, thinly sliced
  • ¾ cup shredded Parmesan cheese

Instructions

  1. Preheat oven to 450°F. Melt butter in a large skillet over medium heat; add onion and greens. Cook, stirring often, 5 to 7 minutes or until greens are tender. Stir in vinegar and red pepper; cook 1 minute.
  2. Brush oil in bottom of a 12-inch cast-iron skillet; sprinkle with cornmeal. Unroll dough, and fit in bottom and up sides of skillet; spread greens on dough, and sprinkle with 1½ cups mozzarella.
  3. Stir together pork and barbecue sauce; spread over cheese. Top with tomato, ½ cup mozzarella, and Parmesan.
  4. Bake 25 to 30 minutes or until cheese is melted and crust is browned. Let stand 5 minutes before slicing.
