Smoky Black Bean Burgers

Ingredients

  • ⅓ cup long-grain white rice
  • 2 (15-oz) cans black beans, drained and rinsed
  • 1 (15-oz) can whole kernel corn, drained
  • 1 cup finely crushed tortilla chips
  • 1 large egg, lightly beaten
  • 1 Tbsp ground cumin
  • 2 cloves garlic, minced
  • 2 Tbsp olive oil
  • ½ cup mayonnaise
  • 1 tsp chili powder
  • 6 hamburger buns, split
  • ½ head iceberg lettuce, shredded
  • 2 Roma tomatoes, thinly sliced
  • 2 avocados, thinly sliced

Instructions

  1. Cook rice according to package directions.
  2. Mash 1 can of beans in a large bowl using a fork until a paste forms. Stir in 1 can beans, corn, tortilla chips, cooked rice, egg, cumin, and garlic. Season lightly with salt and pepper.
  3. Shape into 6 patties. Place on a lightly greased baking sheet; chill at least 1 hour.
  4. Preheat grill or grill pan to medium-high heat. Brush both sides of patties with oil. Grill, covered, 6 to 7 minutes per side or until thoroughly heated.
  5. Stir together mayonnaise and chili powder; spread on cut side of buns. Serve bean burgers on buns with shredded lettuce, tomatoes, and avocado.

  • ½ (10-oz) pkg tortilla chips
  • 1 (16-oz) jar salsa

Side Dish Instructions

  1.  Serve chips with salsa.
