Smoky Black Bean Burgers
Tortilla Chips and SalsaIngredients
- ⅓ cup long-grain white rice
- 2 (15-oz) cans black beans, drained and rinsed
- 1 (15-oz) can whole kernel corn, drained
- 1 cup finely crushed tortilla chips
- 1 large egg, lightly beaten
- 1 Tbsp ground cumin
- 2 cloves garlic, minced
- 2 Tbsp olive oil
- ½ cup mayonnaise
- 1 tsp chili powder
- 6 hamburger buns, split
- ½ head iceberg lettuce, shredded
- 2 Roma tomatoes, thinly sliced
- 2 avocados, thinly sliced
Instructions
- Cook rice according to package directions.
- Mash 1 can of beans in a large bowl using a fork until a paste forms. Stir in 1 can beans, corn, tortilla chips, cooked rice, egg, cumin, and garlic. Season lightly with salt and pepper.
- Shape into 6 patties. Place on a lightly greased baking sheet; chill at least 1 hour.
- Preheat grill or grill pan to medium-high heat. Brush both sides of patties with oil. Grill, covered, 6 to 7 minutes per side or until thoroughly heated.
- Stir together mayonnaise and chili powder; spread on cut side of buns. Serve bean burgers on buns with shredded lettuce, tomatoes, and avocado.

- 1 (16-oz) jar salsa
