Sweet-and-Sour Pork
Easy Fried Rice
Ingredients
- ⅓ cup low-sodium soy sauce
- 2 Tbsp honey
- 1 Tbsp Sriracha hot sauce (optional)
- 2 cloves garlic, minced
- 1 Tbsp grated ginger
- 1½ lb boneless pork loin chops, trimmed and cut into 1-inch chunks
- 2 organic red bell peppers, cut into 1-inch pieces
- 2 cups pineapple chunks
- 3 green onions, cut into 1-inch pieces
- 1 Tbsp arrowroot
- 2 Tbsp water
Instructions
- Whisk together soy sauce, honey, Sriracha, garlic, and ginger.
- Place pork in a large zip-top plastic bag. Pour marinade over pork; seal and chill at least 30 minutes or up to 2 hours.
- Heat a large nonstick skillet over medium-high heat; add pork and marinade to skillet. Cook 6 minutes or until pork is done; add bell peppers, and cook 5 minutes or until tender.
- Add pineapple and onions; whisk together arrowroot and water. Add to mixture; cook 2 minutes or until sauce is thickened.
- Serve over Easy Fried Rice recipe.
Side Dish Ingredients
- 1½ cups brown rice, rinsed
- 2 Tbsp dark sesame oil
- 2 eggs, lightly beaten
- 2 cups organic frozen mixed vegetables
- 2 Tbsp low-sodium soy sauce
Side Dish Instructions
- Cook rice according to package directions; set aside.
- Cook eggs in hot oil in a large nonstick skillet over medium heat until scrambled.
- Add rice, vegetables, and soy sauce; cook 5 minutes.
