Sweet-and-Sour Pork

Ingredients

  • ⅓ cup low-sodium soy sauce
  • 2 Tbsp honey
  • 1 Tbsp Sriracha hot sauce (optional)
  • 2 cloves garlic, minced
  • 1 Tbsp grated ginger
  • 1½ lb boneless pork loin chops, trimmed and cut into 1-inch chunks
  • 2 organic red bell peppers, cut into 1-inch pieces
  • 2 cups pineapple chunks
  • 3 green onions, cut into 1-inch pieces
  • 1 Tbsp arrowroot
  • 2 Tbsp water

Instructions

  1. Whisk together soy sauce, honey, Sriracha, garlic, and ginger.
  2. Place pork in a large zip-top plastic bag. Pour marinade over pork; seal and chill at least 30 minutes or up to 2 hours.
  3. Heat a large nonstick skillet over medium-high heat; add pork and marinade to skillet. Cook 6 minutes or until pork is done; add bell peppers, and cook 5 minutes or until tender.
  4. Add pineapple and onions; whisk together arrowroot and water. Add to mixture; cook 2 minutes or until sauce is thickened.
  5. Serve over Easy Fried Rice recipe.

  • 1½ cups brown rice, rinsed
  • 2 Tbsp dark sesame oil
  • 2 eggs, lightly beaten
  • 2 cups organic frozen mixed vegetables
  • 2 Tbsp low-sodium soy sauce

Side Dish Instructions

  1. Cook rice according to package directions; set aside.
  2. Cook eggs in hot oil in a large nonstick skillet over medium heat until scrambled.
  3. Add rice, vegetables, and soy sauce; cook 5 minutes.
