Italian Sausage with Tomato Relish

Ingredients

  • 1½ cups Italian-style diced tomatoes
  • 1 (19-oz) pkg Italian sausage links
  • 1 cup water
  • 1 cup sliced green bell pepper
  • ½ cup sliced onion
  • 2 cloves garlic, minced
  • 3 Tbsp olive oil
  • ½ tsp pepper

Instructions

  1. Drain tomatoes, reserving juice.
  2. Brown sausage in a large skillet over medium heat 4 to 5 minutes per side. Add reserved tomato juice and 1 cup water; bring to a boil, cover, reduce heat, and simmer 20 to 25 minutes, turning sausage occasionally.
  3. Meanwhile, sauté pepper, onion, and garlic in hot oil in another skillet 15 to 20 minutes or until browned.
  4. Stir in tomatoes; cook until thoroughly heated.
  5. Remove sausage from skillet, and cut into bite-size pieces; discard liquid.
  6. Serve over Parmesan "Grits" recipe, and top with tomato mixture.

Side Dish Ingredients

  • 1 (12-oz) pkg cauliflower florets
  • 2 Tbsp butter
  • ¼ tsp garlic powder
  • ¼ tsp pepper
  • ¼ cup low-sodium chicken broth
  • ½ cup freshly grated Parmesan cheese

Side Dish Instructions

  1. Process cauliflower in a food processor until it resembles grits, scraping sides as needed.
  2. Melt butter in a saucepan over medium heat. Add cauliflower, garlic powder, and pepper; cook 4 minutes, stirring often.
  3. Stir in broth; cook 12 minutes or until liquid is evaporated, stirring occasionally. Add cheese, stirring to melt.
