Italian Sausage with Tomato Relish
Parmesan "Grits"Ingredients
- 1½ cups Italian-style diced tomatoes
- 1 (19-oz) pkg Italian sausage links
- 1 cup water
- 1 cup sliced green bell pepper
- ½ cup sliced onion
- 2 cloves garlic, minced
- 3 Tbsp olive oil
- ½ tsp pepper
Instructions
- Drain tomatoes, reserving juice.
- Brown sausage in a large skillet over medium heat 4 to 5 minutes per side. Add reserved tomato juice and 1 cup water; bring to a boil, cover, reduce heat, and simmer 20 to 25 minutes, turning sausage occasionally.
- Meanwhile, sauté pepper, onion, and garlic in hot oil in another skillet 15 to 20 minutes or until browned.
- Stir in tomatoes; cook until thoroughly heated.
- Remove sausage from skillet, and cut into bite-size pieces; discard liquid.
- Serve over Parmesan "Grits" recipe, and top with tomato mixture.
Side Dish Ingredients
- 1 (12-oz) pkg cauliflower florets
- 2 Tbsp butter
- ¼ tsp garlic powder
- ¼ tsp pepper
- ¼ cup low-sodium chicken broth
- ½ cup freshly grated Parmesan cheese
Side Dish Instructions
- Process cauliflower in a food processor until it resembles grits, scraping sides as needed.
- Melt butter in a saucepan over medium heat. Add cauliflower, garlic powder, and pepper; cook 4 minutes, stirring often.
- Stir in broth; cook 12 minutes or until liquid is evaporated, stirring occasionally. Add cheese, stirring to melt.
