Italian Smothered Chicken

Ingredients

  • ¾ lb boneless, skinless chicken breasts
  • ½ cup Italian dressing
  • ¼ tsp garlic salt
  • 1 Tbsp olive oil
  • ½ cup no-sugar-added pasta sauce
  • 1 cup shredded Italian-blend cheese

Instructions

  1. Place chicken in a large zip-top plastic bag; add dressing. Seal bag, and marinate in refrigerator for at least 1 hour or up to overnight.
  2. Remove chicken from marinade, discarding marinade; sprinkle chicken with garlic salt.
  3. Cook chicken in hot oil in a large skillet over medium-high heat 3 minutes per side or until browned. Reduce heat to medium. Top chicken with pasta sauce; cook 8 to 10 minutes or until done, turning once.
  4. Top chicken with cheese; cover and cook 1 minute or until cheese is melted.

Side Dish Ingredients

  • ½ lb Broccolini
  • 1½ Tbsp olive oil
  • ½ tsp garlic powder
  • ¼ tsp kosher salt

Side Dish Instructions

  1. Preheat oven to 450°F. Toss together Broccolini, oil, garlic powder, and salt. Arrange Broccolini in a single layer on a rimmed baking sheet.
  2. Bake 6 minutes or until tender, stirring once.
