Italian Smothered Chicken
Quick-Roasted BroccoliniIngredients
- ¾ lb boneless, skinless chicken breasts
- ½ cup Italian dressing
- ¼ tsp garlic salt
- 1 Tbsp olive oil
- ½ cup no-sugar-added pasta sauce
- 1 cup shredded Italian-blend cheese
Instructions
- Place chicken in a large zip-top plastic bag; add dressing. Seal bag, and marinate in refrigerator for at least 1 hour or up to overnight.
- Remove chicken from marinade, discarding marinade; sprinkle chicken with garlic salt.
- Cook chicken in hot oil in a large skillet over medium-high heat 3 minutes per side or until browned. Reduce heat to medium. Top chicken with pasta sauce; cook 8 to 10 minutes or until done, turning once.
- Top chicken with cheese; cover and cook 1 minute or until cheese is melted.

- ½ lb Broccolini
- 1½ Tbsp olive oil
- ½ tsp garlic powder
- ¼ tsp kosher salt
Side Dish Instructions
- Preheat oven to 450°F. Toss together Broccolini, oil, garlic powder, and salt. Arrange Broccolini in a single layer on a rimmed baking sheet.
- Bake 6 minutes or until tender, stirring once.
