Everything Bagel Chicken

Parmesan-Roasted Broccoli and Tomatoes

Ingredients

  • ½ lb boneless, skinless chicken breasts
  • 1½ Tbsp butter, melted
  • 2 Tbsp everything bagel seasoning
  • 3 Tbsp olive-oil mayonnaise
  • ½ to 1 Tbsp Dijon mustard

Instructions

  1. Preheat oven to 450ºF. Arrange chicken in an 8-inch baking dish. Brush butter on chicken. Sprinkle with seasoning, pressing gently to adhere.
  2. Bake 20 to 25 minutes or until chicken is done.
  3. Combine mayonnaise and mustard in a small bowl. Serve with chicken.

  • ½ (12-oz) pkg broccoli florets
  • 1 cup grape tomatoes
  • 1½ Tbsp olive oil
  • ½ tsp garlic salt
  • 2 Tbsp freshly grated Parmesan cheese

Side Dish Instructions

  1. Preheat oven to 450°F. Toss together broccoli, tomatoes, oil, and garlic salt on a rimmed baking sheet; spread in a single layer.
  2. Bake 10 minutes or until almost tender. Sprinkle with cheese; toss. Bake 5 minutes longer or until tender.
