Strawberry Prosecco Pops

Ingredients

  • ½ cup sugar
  • ½ cup water
  • 1 (16-oz) pkg strawberries, hulled
  • 1 cup chilled prosecco
  • 1 Tbsp fresh lime juice

Instructions

  1. Bring sugar and water to a boil in a small saucepan, stirring occasionally. Boil 2 minutes or until sugar is dissolved. Pour into a heat-proof bowl; cover and chill at least 4 hours.
  2. Process sugar mixture and strawberries in a blender until smooth. Stir in prosecco and lime juice. Mixture will bubble up. Once bubbles subside, pour into pop molds. Skim and discard any foam from surface.
  3. Cover molds, and freeze at least 8 hours.
