Pork Fried "Rice"

Ingredients

  • ½ lb ground pork or sausage
  • 2 cloves garlic, chopped
  • 1 tsp ginger paste
  • 1½ Tbsp sesame oil
  • ½ red bell pepper, cut into ½-inch pieces
  • 1 (12-oz) pkg frozen riced cauliflower
  • 1 large egg, lightly beaten
  • 2 Tbsp low-sodium soy sauce
  • ⅓ cup chopped green onions

Instructions

  1. Brown pork, garlic, and ginger paste in a nonstick skillet over medium heat until browned and crumbly; transfer to a bowl.
  2. Heat sesame oil in same skillet; add bell pepper and frozen cauliflower. Cook 5 minutes, stirring occasionally, or until cauliflower is thawed.
  3. Push vegetables to one side of skillet. Add egg to opposite side of skillet. Cook, without stirring, 10 seconds. Cook egg, stirring constantly, 2 minutes or until scrambled.
  4. Return pork to skillet. Stir in soy sauce and onions. Cook 2 minutes or until thoroughly heated.

Side Dish Ingredients

  • 1 Tbsp sesame oil
  • 2 cloves garlic, minced
  • ½ Tbsp rice wine vinegar
  • ½ Tbsp low-sodium soy sauce
  • ¾ lb asparagus, trimmed

Side Dish Instructions

  1. Place oil, garlic, vinegar, and soy sauce in a zip-top bag. Seal bag, and shake to blend; add asparagus to bag. Seal and chill 1 to 6 hours.
  2. Preheat grill to medium-high heat. Drain asparagus, discarding marinade. Grill asparagus, covered, 10 minutes or until browned, turning often.
