Pork Fried "Rice"

Ingredients
- ½ lb ground pork or sausage
- 2 cloves garlic, chopped
- 1 tsp ginger paste
- 1½ Tbsp sesame oil
- ½ red bell pepper, cut into ½-inch pieces
- 1 (12-oz) pkg frozen riced cauliflower
- 1 large egg, lightly beaten
- 2 Tbsp low-sodium soy sauce
- ⅓ cup chopped green onions
Instructions
- Brown pork, garlic, and ginger paste in a nonstick skillet over medium heat until browned and crumbly; transfer to a bowl.
- Heat sesame oil in same skillet; add bell pepper and frozen cauliflower. Cook 5 minutes, stirring occasionally, or until cauliflower is thawed.
- Push vegetables to one side of skillet. Add egg to opposite side of skillet. Cook, without stirring, 10 seconds. Cook egg, stirring constantly, 2 minutes or until scrambled.
- Return pork to skillet. Stir in soy sauce and onions. Cook 2 minutes or until thoroughly heated.
Side Dish Ingredients
- 1 Tbsp sesame oil
- 2 cloves garlic, minced
- ½ Tbsp rice wine vinegar
- ½ Tbsp low-sodium soy sauce
- ¾ lb asparagus, trimmed
Side Dish Instructions
- Place oil, garlic, vinegar, and soy sauce in a zip-top bag. Seal bag, and shake to blend; add asparagus to bag. Seal and chill 1 to 6 hours.
- Preheat grill to medium-high heat. Drain asparagus, discarding marinade. Grill asparagus, covered, 10 minutes or until browned, turning often.
