Greek Chicken Salad with Hummus Dressing
Buttered French BreadIngredients
- 1½ lb chicken tenderloins (see Note)
- 2 tsp Greek seasoning
- ½ cup plain hummus
- 2 Tbsp lemon juice
- 1 Tbsp water
- ½ tsp pepper
- 1 (9-oz) pkg premium romaine salad mix
- 1 English cucumber, coarsely chopped
- 1 cup halved pitted kalamata olives
- ½ cup crumbled feta cheese
Instructions
- Preheat oven to 425°F. Sprinkle chicken with seasoning; place on a greased baking sheet. Bake 12 minutes or until done.
- Meanwhile, whisk together hummus, lemon juice, water, and pepper.
- Toss together salad mix, cucumber, olives, cheese, and chicken in a serving bowl; drizzle with dressing.
Side Dish Ingredients
- 2 Tbsp light butter with canola oil
- ½ tsp minced garlic
- 6 oz French baguette
Side Dish Instructions
- Heat butter in microwave at HIGH in 10-second intervals until softened but not melted. Stir in garlic.
- Cut bread into 12 slices; serve with garlic butter.
