Greek Chicken Salad with Hummus Dressing

Ingredients

  • 1½ lb chicken tenderloins (see Note)
  • 2 tsp Greek seasoning
  • ½ cup plain hummus
  • 2 Tbsp lemon juice
  • 1 Tbsp water
  • ½ tsp pepper
  • 1 (9-oz) pkg premium romaine salad mix
  • 1 English cucumber, coarsely chopped
  • 1 cup halved pitted kalamata olives
  • ½ cup crumbled feta cheese

Instructions

  1. Preheat oven to 425°F. Sprinkle chicken with seasoning; place on a greased baking sheet. Bake 12 minutes or until done.
  2. Meanwhile, whisk together hummus, lemon juice, water, and pepper.
  3. Toss together salad mix, cucumber, olives, cheese, and chicken in a serving bowl; drizzle with dressing.

Side Dish Ingredients

  • 2 Tbsp light butter with canola oil
  • ½ tsp minced garlic
  • 6 oz French baguette

Side Dish Instructions

  1. Heat butter in microwave at HIGH in 10-second intervals until softened but not melted. Stir in garlic.
  2. Cut bread into 12 slices; serve with garlic butter.
