Garlicky Sautéed Shrimp

Toasted Baguette and Parmesan Romaine Salad

Ingredients

  • 4 zucchini
  • 2 lb peeled and deveined, large raw shrimp
  • ½ tsp pepper
  • 2 Tbsp olive oil
  • 4 cloves garlic, minced
  • 2 Tbsp butter
  • 6 Tbsp finely chopped fresh parsley

Instructions

  1. Cut zucchini into noodles using a spiralizer. Or cut zucchini lengthwise into slices; stack 3 slices at a time, and cut lengthwise into thin strips to resemble strands of pasta.
  2. Pat dry shrimp; sprinkle with pepper. Cook in hot oil in a large skillet over medium-high heat 3 to 5 minutes or until shrimp turn pink.
  3. Add zucchini and garlic; cook 2 to 3 minutes or until thoroughly heated. Stir in butter until melted. Sprinkle with parsley.

  • 1 (10-oz) French baguette, sliced
  • 2 Tbsp olive oil
  • 2 romaine lettuce hearts, chopped
  • ⅓ cup olive oil vinaigrette
  • ⅔ cup freshly grated Parmesan cheese

Side Dish Instructions

  1. Preheat broiler. Place bread slices in a single layer on a baking sheet. Brush or drizzle with oil. Broil 1 to 2 minutes or until toasted.
  2. Toss together lettuce and vinaigrette in a large bowl; sprinkle with cheese. Toss again.
