Garlicky Sautéed Shrimp
Toasted Baguette and Parmesan Romaine Salad
Ingredients
- 4 zucchini
- 2 lb peeled and deveined, large raw shrimp
- ½ tsp pepper
- 2 Tbsp olive oil
- 4 cloves garlic, minced
- 2 Tbsp butter
- 6 Tbsp finely chopped fresh parsley
Instructions
- Cut zucchini into noodles using a spiralizer. Or cut zucchini lengthwise into slices; stack 3 slices at a time, and cut lengthwise into thin strips to resemble strands of pasta.
- Pat dry shrimp; sprinkle with pepper. Cook in hot oil in a large skillet over medium-high heat 3 to 5 minutes or until shrimp turn pink.
- Add zucchini and garlic; cook 2 to 3 minutes or until thoroughly heated. Stir in butter until melted. Sprinkle with parsley.

- 1 (10-oz) French baguette, sliced
- 2 Tbsp olive oil
- 2 romaine lettuce hearts, chopped
- ⅓ cup olive oil vinaigrette
- ⅔ cup freshly grated Parmesan cheese
Side Dish Instructions
- Preheat broiler. Place bread slices in a single layer on a baking sheet. Brush or drizzle with oil. Broil 1 to 2 minutes or until toasted.
- Toss together lettuce and vinaigrette in a large bowl; sprinkle with cheese. Toss again.
