Ingredients

  • 2 lb boneless chuck roast, trimmed and cut into chunks
  • 1 (14.5-oz) can stewed tomatoes
  • 1 (1.5-oz) pkg beef stew seasoning mix

Instructions

  1. Place all ingredients in a greased 5- to 6-quart slow cooker. Cover and cook on LOW 8 hours or until beef is tender.

Side Dish Ingredients

  • 2 (4.1-oz) pouches four-cheese pasta (see Note)
  • 1 (16-oz) pkg baby carrots
  • 3 Tbsp butter
  • ½ tsp salt
  • ½ tsp pepper

Side Dish Instructions

  1. Cook pasta according to package directions.
  2. Meanwhile, cook carrots in boiling water to cover 8 to 10 minutes or until tender; drain.
  3. Melt butter in a large skillet over medium heat; cook 2 minutes or until butter begins to brown, stirring constantly. Add carrots, salt, and pepper to skillet; sauté 3 minutes.
