Toasted French Bread with Cilantro Butter

Ingredients
- 1½ lb ground beef
- ¼ cup butter
- ¼ cup all-purpose flour
- 1 tsp garlic powder
- 1 (32-oz) carton less sodium chicken broth
- 2 russet potatoes, peeled and cut into 1-inch pieces
- 1 cup heavy cream
- 1 (8-oz) pkg shredded Cheddar cheese
Instructions
- Cook beef in a large Dutch oven over medium heat until browned and crumbly; drain.
- Melt butter in same pot over medium heat. Add flour and garlic powder; cook, stirring constantly, 2 minutes. Gradually stir in broth.
- Add potatoes; bring to a boil, reduce heat, and simmer 10 minutes or until potatoes are just tender.
- Stir in cream and cooked beef; cook 10 minutes or until soup is slightly thickened. Gradually stir in cheese until melted.
Side Dish Ingredients
- 1 (14-oz) loaf French bread
- ¼ cup butter, softened
- ¼ cup chopped fresh cilantro
Side Dish Instructions
- Preheat broiler. Cut bread in half lengthwise; place, cut sides up, on a baking sheet. Broil 2 to 3 minutes or until toasted.
- Meanwhile, combine butter and cilantro. Serve with bread.
