Ingredients

  • 2 tsp brown sugar
  • ½ tsp Italian seasoning
  • ¼ tsp kosher salt
  • 1 lb bone in, skin on chicken thighs
  • 1½ Tbsp butter, divided
  • 2 tsp olive oil
  • ½ lb small red potatoes, quartered
  • ½ small onion, cut into wedges
  • ½ lemon, thinly sliced

Instructions

  1. Preheat oven to 400°F. Combine sugar, seasoning, and salt; rub on chicken.
  2. Melt ½ Tbsp butter with oil in a large nonstick skillet over medium-high heat. Add chicken, skin sides down; cook 3 minutes or until browned.
  3. Transfer chicken to a greased rimmed baking sheet, skin sides up. Arrange potatoes and onion around chicken. Melt 1 Tbsp butter, and drizzle over potatoes and onions. Top with lemon slices.
  4. Bake 30 to 40 minutes or until potatoes are tender and chicken is done.

Side Dish Ingredients

  • 1 (8-oz) pkg thin green beans
  • 1 lemon
  • 2 tsp olive oil
  • ⅛ tsp kosher salt
  • ⅛ tsp pepper

Side Dish Instructions

  1. Microwave green beans according to package directions. Grate ½ tsp zest and squeeze 1 tsp juice from lemon.
  2. Toss green beans with lemon zest, lemon juice, butter, salt, and pepper.
