Ingredients
- 2 tsp brown sugar
- ½ tsp Italian seasoning
- ¼ tsp kosher salt
- 1 lb bone in, skin on chicken thighs
- 1½ Tbsp butter, divided
- 2 tsp olive oil
- ½ lb small red potatoes, quartered
- ½ small onion, cut into wedges
- ½ lemon, thinly sliced
Instructions
- Preheat oven to 400°F. Combine sugar, seasoning, and salt; rub on chicken.
- Melt ½ Tbsp butter with oil in a large nonstick skillet over medium-high heat. Add chicken, skin sides down; cook 3 minutes or until browned.
- Transfer chicken to a greased rimmed baking sheet, skin sides up. Arrange potatoes and onion around chicken. Melt 1 Tbsp butter, and drizzle over potatoes and onions. Top with lemon slices.
- Bake 30 to 40 minutes or until potatoes are tender and chicken is done.
Side Dish Ingredients
- 1 (8-oz) pkg thin green beans
- 1 lemon
- 2 tsp olive oil
- ⅛ tsp kosher salt
- ⅛ tsp pepper
Side Dish Instructions
- Microwave green beans according to package directions. Grate ½ tsp zest and squeeze 1 tsp juice from lemon.
- Toss green beans with lemon zest, lemon juice, butter, salt, and pepper.
