Ingredients

  • 2 large eggs
  • 1½ lb ground chicken
  • 1½ cups panko breadcrumbs
  • ½ cup chopped green onions
  • ½ cup chopped almonds
  • ¼ tsp salt
  • 1½ cups sweet and sour sauce

Instructions

  1. Preheat oven to 425°F. Light beat eggs in a large bowl. Add chicken, breadcrumbs, green onions, nuts, and salt; gently mix together using your hands.
  2. Roll chicken mixture into 1½-inch balls. Place on two large greased rimmed baking sheets.
  3. Bake 15 minutes or until meatballs are no longer pink in center, shaking pans after 5 minutes.
  4. Meanwhile, heat sauce in a saucepan over medium heat. Toss meatballs in sauce.

  • 1 (16-oz) container pineapple chunks
  • 3 Tbsp butter, melted
  • 3 Tbsp brown sugar
  • 3 (3.5-oz) pouches boil in bag brown rice
  • 3 green onions, thinly sliced
  • ½ tsp salt
  • ½ tsp pepper

Side Dish Instructions

  1. Preheat oven to 425°F. Toss together pineapple, butter, and brown sugar on a rimmed baking sheet; spread in a single layer. Roast 8 to 10 minutes or until pineapple is charred.
  2. Meanwhile, cook rice according to package directions. Stir in green onions, salt, and pepper.
