Mason Jar Chicken-and-Brown Rice Salads

Serves 4-6

Ingredients

  • 1 (8½-oz) pouch microwavable brown rice
  • 2 tablespoons balsamic vinegar
  • 1½ tablespoons brown sugar
  • 1 tablespoon lower-sodium soy sauce
  • 1 tablespoon fresh lemon juice
  • ¼ teaspoon salt, ¼ teaspoon pepper
  • 2 tablespoons olive oil
  • 1 cup chopped deli rotisserie chicken
  • 1 (6-oz) carton fresh blueberries
  • ½ cup crumbled feta cheese
  • ½ cup chopped walnuts
  • 1 cup mixed salad greens

Instructions

  1. Prepare rice according to package directions.
  2. Whisk together vinegar, brown sugar, soy sauce, lemon juice, salt and pepper.
  3. Gradually whisk in oil.
  4. Pour dressing evenly into four 1-pint Mason jars or containers.
  5. Spoon rice evenly into containers, and stir to coat with dressing.
  6. Layer chicken, blueberries, cheese, walnuts and salad greens evenly in each jar.
  7. Seal.

Watermelon Cubes

Serves 4-6

Ingredients

  • 4 cups cubed seedless watermelon

Instructions

  1. Pack watermelon with salads.
