Beef and Bean Tostadas
Avocado and Orange SaladIngredients
- 12 corn tortillas
- 1 (1-lb) pkg ground beef
- 1 tsp ground cumin
- ½ tsp onion powder
- 1 (15-oz) can refried beans, heated
- 1 (8-oz) carton sour cream
- 1 cup shredded Cheddar cheese
- 1 (8-oz) bag shredded iceberg lettuce
- 1 cup salsa
- ½ cup chopped fresh cilantro
Instructions
- Preheat oven to 400°F. Spray tortillas with cooking spray; place tortillas on a baking sheet. Bake 5 minutes or until crisp.
- Cook ground beef in a large skillet until browned and crumbly; drain and return to skillet. Add cumin and onion powder; season with salt and pepper.
- Spread beans over tortillas. Top with beef, sour cream, cheese, lettuce, salsa and cilantro.
Side Dish Ingredients
- 2 large avocados, peeled, pitted and sliced
- 2 navel oranges, sliced
- 1 tsp balsamic vinegar
- 2 Tbsp fresh chopped cilantro
Side Dish Instructions
- Layer avocados and oranges alternately on a serving platter; drizzle with vinegar. Sprinkle with cilantro.
