Beef and Bean Tostadas

Ingredients

  • 12 corn tortillas
  • 1 (1-lb) pkg ground beef
  • 1 tsp ground cumin
  • ½ tsp onion powder
  • 1 (15-oz) can refried beans, heated
  • 1 (8-oz) carton sour cream
  • 1 cup shredded Cheddar cheese
  • 1 (8-oz) bag shredded iceberg lettuce
  • 1 cup salsa
  • ½ cup chopped fresh cilantro

Instructions

  1. Preheat oven to 400°F. Spray tortillas with cooking spray; place tortillas on a baking sheet. Bake 5 minutes or until crisp.
  2. Cook ground beef in a large skillet until browned and crumbly; drain and return to skillet. Add cumin and onion powder; season with salt and pepper.
  3. Spread beans over tortillas. Top with beef, sour cream, cheese, lettuce, salsa and cilantro.

Side Dish Ingredients

  • 2 large avocados, peeled, pitted and sliced
  • 2 navel oranges, sliced
  • 1 tsp balsamic vinegar
  • 2 Tbsp fresh chopped cilantro

Side Dish Instructions

  1. Layer avocados and oranges alternately on a serving platter; drizzle with vinegar. Sprinkle with cilantro.
