Ingredients

  • 3 heads Bibb or Boston lettuce, torn
  • 1 cup diced pickled beets
  • 1 cup pickled green beans
  • 1½ cups thinly sliced English cucumber
  • 1 pint cherry tomatoes, halved
  • ½ onion, thinly sliced
  • 4 hard-cooked eggs, peeled and quartered
  • ½ (8-oz) block Cheddar cheese, cut into small wedges
  • Creamy Tarragon Dressing (recipe follows)

Instructions

  1. Place lettuce in a large bowl. Arrange beets, green beans, cucumber, tomatoes, onion, eggs, and cheese on lettuce.
  2. Serve with Creamy Tarragon Dressing recipe.
