Pork and Vegetable Stir-Fry

Ingredients

  • 1 cup apricot preserves
  • 6 Tbsp soy sauce
  • 2 Tbsp cornstarch
  • 2 Tbsp vegetable oil, divided
  • 1½ lb pork tenderloin, trimmed, and cut into ½-inch pieces
  • 1 head broccoli, cut into florets
  • 1 red bell pepper, thinly sliced
  • 1 (8-oz) pkg fresh sugar snap peas, cut in half
  • 1 (8-oz) pkg sliced fresh mushrooms
  • 2 cups sliced carrots
  • ½ cup sliced green onions

Instructions

  1. Whisk together apricot preserves, soy sauce, and cornstarch in a small bowl; set aside.
  2. Heat 1 Tbsp oil in a large nonstick skillet over medium-high heat.
  3. Lightly season pork with salt and pepper; add to skillet, and cook 4 minutes or until browned.
  4. Remove from skillet, and set aside.
  5. Heat remaining 1 Tbsp oil in skillet over medium-high heat; add broccoli, bell pepper, snap peas, mushrooms, and carrots.
  6. Cook, stirring, 4 minutes or until crisp-tender.
  7. Return pork to skillet, and stir in apricot mixture. Cook, stirring, 2 to 3 minutes or until sauce is thickened and vegetables are tender.
  8. Stir in green onions, and serve over rice.

Side Dish Ingredients

  • 2 cups uncooked long-grain rice

  1. Cook rice according to package directions.
