Mexican Street Corn

Ingredients

  • 10 ears corn on the cob, husks removed
  • ½ cup finely crumbled cotija cheese (or use feta cheese)
  • ¼ cup mayonnaise
  • ¼ cup sour cream
  • 1 Tbsp fresh lime juice
  • ½ tsp garlic powder
  • ¼ tsp chili powder
  • ½ cup chopped fresh cilantro
  • Garnish: chili powder

Instructions

  1. Preheat grill or grill pan to medium-high heat .
  2. Grill corn, covered with grill lid, 15 minutes, turning frequently, until corn is browned and tender.
  3. Meanwhile, stir together cheese, mayonnaise, sour cream, lime juice, garlic powder, and chili powder in a small bowl.
  4. Brush mixture over corn; sprinkle with cilantro, and, if desired, garnish with additional chili powder. Serve immediately.
