Greek-Style Turkey Burgers
Spring Fruit Salad and Veggie SticksIngredients
- 1 red onion
- 1½ lb ground turkey
- ⅓ cup sun-dried tomatoes in oil, drained and chopped
- 3 cloves garlic, minced
- 2 Tbsp Greek seasoning
- ½ tsp salt
- 1 (4-oz) pkg crumbled feta cheese, divided
- 6 whole-grain hamburger buns, toasted
- Olive oil mayonnaise
- 2 large Roma tomatoes, sliced
- 2 cups baby arugula (or any lettuce or baby spinach)
Instructions
- Cut onion into thin rings; finely chop enough onion to yield ⅓ cup, and set aside remaining onion to use as a topping.
- Combine turkey, ⅓ cup onion, sun-dried tomatoes, garlic, Greek seasoning and salt; mix with hands. Stir in ¼ cup feta cheese. Shape into 6 patties.
- Cook pattiest in a large skillet or grill pan over medium-high heat 4 to 5 minutes per side or until no longer pink.
- Serve burgers on buns with mayonnaise, tomato, onion rings, arugula and remaining feta cheese.
Side Dish Ingredients
- 4 plums or pluots, peeled, pitted and cut into wedges
- 4 apricots, peeled, pitted and cut into wedges
- 1 lb cherries, pitted
- 2 Tbsp fresh lemon juice
- ¼ cup sugar
- ¼ cup fresh mint leaves
- 1 (6.7-oz) pkg veggie sticks
Side Dish Instructions
- Toss together first 4 ingredients in a large bowl.
- Microwave sugar and ¼ cup water at HIGH 2 minutes or until sugar dissolves and a thick syrup forms.
- Add mint to hot syrup; cool to room temperature. Discard mint. Toss syrup with fruit.
- Serve fruit and veggie sticks with burgers.
