Crunchy Onion Rings
Ingredients
- 3 large sweet onions, thinly sliced
- 2 cups whole buttermilk
- 2 cups all-purpose flour
- 1½ cups yellow cornmeal
- 2 Tbsp Cajun seasoning
- Vegetable oil, for frying
Instructions
- Separate onions into rings, and place in a large bowl. Pour buttermilk over onions; stir until coated.
- Stir together flour, cornmeal, and Cajun seasoning in a separate bowl.
- Pour oil to a depth of 4 inches in a large Dutch oven; heat over medium heat until a thermometer registers 350°F.
- Working in batches, remove onions from buttermilk, and dredge in flour mixture, shaking off excess.
- Fry onion rings, in batches, 3 to 4 minutes or until golden brown; drain on wire racks set over paper towels or newspaper.
