Crunchy Onion Rings

Ingredients

  • 3 large sweet onions, thinly sliced
  • 2 cups whole buttermilk
  • 2 cups all-purpose flour
  • 1½ cups yellow cornmeal
  • 2 Tbsp Cajun seasoning
  • Vegetable oil, for frying

Instructions

  1. Separate onions into rings, and place in a large bowl. Pour buttermilk over onions; stir until coated.
  2. Stir together flour, cornmeal, and Cajun seasoning in a separate bowl.
  3. Pour oil to a depth of 4 inches in a large Dutch oven; heat over medium heat until a thermometer registers 350°F.
  4. Working in batches, remove onions from buttermilk, and dredge in flour mixture, shaking off excess.
  5. Fry onion rings, in batches, 3 to 4 minutes or until golden brown; drain on wire racks set over paper towels or newspaper.
