Ham and Cheese Hash Brown Waffles

Ingredients

  • 1 (30-oz) pkg frozen hash browns, thawed
  • 1 (8-oz) pkg diced cooked ham
  • 2 cups shredded Cheddar cheese
  • 1 tsp garlic salt
  • 1 tsp pepper
  • 3 large eggs, lightly beaten

Instructions

  1. Place hash browns between layers of paper towels; roll up, and squeeze liquid from potatoes.
  2. Place potatoes in a large bowl.
  3. Stir in ham, cheese, garlic salt and pepper.
  4. Add beaten eggs, stirring to combine.
  5. Preheat waffle iron according to manufacturer's directions.
  6. Spray both sides of iron with cooking spray.
  7. Spoon about 1 cup potato mixture onto waffle iron; close and cook 5 minutes or until browned and crisp.
  8. Repeat procedure with remaining potato mixture.

Side Dish Ingredients

  • 2 cups strawberries, cut up
  • 1 cup blueberries
  • 1 (11-oz) can mandarin oranges, drained

Side Dish Instructions

  1. Toss together berries and oranges to serve.
