Spaghetti Muffin Cups with Meatballs
Steamed Fresh Green Beans and Apple SlicesIngredients
- ½ (16-oz) pkg spaghetti
- 1 (24-oz) jar pasta sauce, divided
- 1 cup shredded Parmesan cheese
- ½ cup pepperoni, chopped
- 2 large eggs, lightly beaten
- 12 frozen Italian meatballs, thawed
- 1 (8-oz) block mozzarella cheese, shredded
Instructions
- Preheat oven to 350°F. Cook spaghetti according to package directions; drain and place in a large bowl.
- Add ¼ cup pasta sauce, Parmesan, pepperoni, and eggs; toss.
- Divide pasta mixture among wells of a lightly greased 12-cup muffin pan, pressing down gently.
- Place 1 meatball in center of each muffin cup. Spoon 1 Tbsp pasta sauce over each meatball, and sprinkle with mozzarella.
- Bake 25 to 30 minutes or until lightly browned.
- Let cool in pans 5 minutes before serving.
Side Dish Ingredients
- 2 lb green beans, trimmed
- 1 Tbsp extra virgin olive oil
- 3 red apples, sliced
Side Dish Instructions
- Arrange beans in a steamer basket over boiling water. Cover and steam 5 minutes or until crisp-tender.
- Drizzle with oil; toss. Season with salt and pepper to taste. Serve with apples.
