Spaghetti Muffin Cups with Meatballs

Ingredients

  • ½ (16-oz) pkg spaghetti
  • 1 (24-oz) jar pasta sauce, divided
  • 1 cup shredded Parmesan cheese
  • ½ cup pepperoni, chopped
  • 2 large eggs, lightly beaten
  • 12 frozen Italian meatballs, thawed
  • 1 (8-oz) block mozzarella cheese, shredded

Instructions

  1. Preheat oven to 350°F. Cook spaghetti according to package directions; drain and place in a large bowl.
  2. Add ¼ cup pasta sauce, Parmesan, pepperoni, and eggs; toss.
  3. Divide pasta mixture among wells of a lightly greased 12-cup muffin pan, pressing down gently.
  4. Place 1 meatball in center of each muffin cup. Spoon 1 Tbsp pasta sauce over each meatball, and sprinkle with mozzarella.
  5. Bake 25 to 30 minutes or until lightly browned.
  6. Let cool in pans 5 minutes before serving.

Side Dish Ingredients

  • 2 lb green beans, trimmed
  • 1 Tbsp extra virgin olive oil
  • 3 red apples, sliced

Side Dish Instructions

  1. Arrange beans in a steamer basket over boiling water. Cover and steam 5 minutes or until crisp-tender.
  2. Drizzle with oil; toss. Season with salt and pepper to taste. Serve with apples.
