Smoky Turkey Chili in Sweet Potatoes

Ingredients

  • 2 lb lean ground turkey, broken into chunks
  • 1 onion, chopped
  • 1 green bell pepper, chopped
  • 1 (14.5-oz) can diced tomatoes
  • 1¾ cups organic chicken broth
  • 3 Tbsp chopped chipotle chile peppers in adobo sauce (about 3 to 4 peppers)
  • 6 cloves garlic, minced
  • 6 sweet potatoes
  • 2 green onions, chopped
  • Lime wedges

Instructions

  1. Combine first 7 ingredients, 2 tsp salt and 1 tsp pepper in a 5- to 7-quart slow cooker.
  2. Cover and cook on LOW 5 to 6 hours.
  3. Meanwhile, preheat oven to 400°F.
  4.  Pierce potatoes several times using a knife.
  5. Bake potatoes on a foil-lined baking sheet 1 hour or until tender.
  6. Split potatoes lengthwise, and spoon turkey chili over top using a slotted spoon.
  7. Sprinkle with green onions; serve with lime wedges.
