Grilled Jamaican Jerk Chicken Wings

Ingredients

  • 4 lb chicken wings
  • ¼ cup olive oil
  • 3 cloves garlic, minced
  • 1 tsp salt
  • 1 tsp pepper
  • 1 cup yellow mustard
  • ½ cup apple cider vinegar
  • ⅓ cup firmly packed brown sugar
  • 2½ Tbsp Jerk seasoning
  • 2 Tbsp soy sauce
  • 1 tsp honey

Instructions

  1. Using a sharp knife, separate wings and drumettes. Cut off wing tips, and discard.
  2. Toss together wings, oil, garlic, salt, and pepper in a large bowl.
  3. Transfer wing mixture to 2 gallon-size zip-top plastic freezer bags. Seal bags, and chill at least 2 hours or up to 2 days.
  4. Preheat grill to medium-high heat. Remove chicken from marinade; discard marinade.
  5. Grill wings, covered with grill lid, 20 to 25 minutes, turning occasionally, or until chicken is done and skin is crisp.
  6. Meanwhile, whisk together mustard, vinegar, brown sugar, Jerk seasoning, soy sauce, and honey; serve with wings.

Side Dish Ingredients

  • 1½ lb okra
  • 2 Tbsp olive oil
  • ½ tsp salt
  • ½ tsp pepper

Side Dish Instructions

  1. Soak wooden skewers in water 30 minutes.
  2. Preheat grill to medium-high heat.
  3. Toss together okra, oil, salt and pepper; thread okra onto double skewers, 2 skewers side by side.
  4. Grill, covered with grill lid, 3 minutes per side or until crisp-tender.
