Grilled Jamaican Jerk Chicken Wings
Salt-and-Pepper Grilled OkraIngredients
- 4 lb chicken wings
- ¼ cup olive oil
- 3 cloves garlic, minced
- 1 tsp salt
- 1 tsp pepper
- 1 cup yellow mustard
- ½ cup apple cider vinegar
- ⅓ cup firmly packed brown sugar
- 2½ Tbsp Jerk seasoning
- 2 Tbsp soy sauce
- 1 tsp honey
Instructions
- Using a sharp knife, separate wings and drumettes. Cut off wing tips, and discard.
- Toss together wings, oil, garlic, salt, and pepper in a large bowl.
- Transfer wing mixture to 2 gallon-size zip-top plastic freezer bags. Seal bags, and chill at least 2 hours or up to 2 days.
- Preheat grill to medium-high heat. Remove chicken from marinade; discard marinade.
- Grill wings, covered with grill lid, 20 to 25 minutes, turning occasionally, or until chicken is done and skin is crisp.
- Meanwhile, whisk together mustard, vinegar, brown sugar, Jerk seasoning, soy sauce, and honey; serve with wings.
Side Dish Ingredients
- 1½ lb okra
- 2 Tbsp olive oil
- ½ tsp salt
- ½ tsp pepper
Side Dish Instructions
- Soak wooden skewers in water 30 minutes.
- Preheat grill to medium-high heat.
- Toss together okra, oil, salt and pepper; thread okra onto double skewers, 2 skewers side by side.
- Grill, covered with grill lid, 3 minutes per side or until crisp-tender.
