Ham and Cheese Hash Brown Waffles
Scrambled Eggs and Strawberries
Ingredients
- 1 (30-oz) pkg frozen shredded hash browns, thawed
- 1 (8-oz) pkg diced cooked ham
- 1½ cups shredded reduced-fat Cheddar cheese
- ½ tsp garlic salt
- 1 tsp pepper
- 3 large eggs, lightly beaten
Instructions
- Place hash browns between layers of paper towels; roll up, and squeeze liquid from potatoes.
- Place potatoes in a large bowl. Stir in ham, cheese, garlic salt and pepper. Stir in eggs.
- Preheat waffle iron according to manufacturer's directions. Coat both sides of iron with cooking spray.
- Spoon about 1 cup potato mixture onto waffle iron; close and cook 5 minutes or until browned and crisp.
- Repeat procedure with remaining potato mixture.
Side Dish Ingredients
- 3 Tbsp fat-free milk
- 4 large eggs
- 2 large egg whites
- ¼ tsp salt
- ⅛ tsp pepper
- 1 (16-oz) pkg strawberries, sliced
Side Dish Instructions
- Whisk together milk, eggs and egg whites. Sprinkle with salt and pepper.
- Cook egg mixture in a nonstick skillet coated with cooking spray over medium heat, without stirring, until eggs begin to set on bottom.
- Cook, stirring constantly, until eggs are thickened and set.
- Serve warm with strawberries.
