Ham and Cheese Hash Brown Waffles

Ingredients

  • 1 (30-oz) pkg frozen shredded hash browns, thawed
  • 1 (8-oz) pkg diced cooked ham
  • 1½ cups shredded reduced-fat Cheddar cheese
  • ½ tsp garlic salt
  • 1 tsp pepper
  • 3 large eggs, lightly beaten

Instructions

  1. Place hash browns between layers of paper towels; roll up, and squeeze liquid from potatoes.
  2. Place potatoes in a large bowl. Stir in ham, cheese, garlic salt and pepper. Stir in eggs.
  3. Preheat waffle iron according to manufacturer's directions. Coat both sides of iron with cooking spray.
  4. Spoon about 1 cup potato mixture onto waffle iron; close and cook 5 minutes or until browned and crisp.
  5. Repeat procedure with remaining potato mixture.

Side Dish Ingredients

  • 3 Tbsp fat-free milk
  • 4 large eggs
  • 2 large egg whites
  • ¼ tsp salt
  • ⅛ tsp pepper
  • 1 (16-oz) pkg strawberries, sliced

Side Dish Instructions

  1. Whisk together milk, eggs and egg whites. Sprinkle with salt and pepper.
  2. Cook egg mixture in a nonstick skillet coated with cooking spray over medium heat, without stirring, until eggs begin to set on bottom.
  3. Cook, stirring constantly, until eggs are thickened and set.
  4. Serve warm with strawberries.
